Two to three months prior to Ganesh Chaturthi, life-like clay models of Lord Ganesha are made for sale by specially skilled artisans. They are beautifully decorated & depict Lord Ganesh in various poses. The size of these statues may vary from 3/4th of an inch to over 25 feet.
Ganesh Chaturthi starts with the installation of these Ganesh statues in colorfully decorated homes and specially erected temporary structures pandals in every locality. The pandals are erected by the people or a specific society or locality or group by collecting monetary contributions. The pandals are decorated specially for the festival, either by using decorative items like flower garlands, lights, etc or are theme based decorations, which depict religious themes or current events. The statues are worshiped with families and friends.
For 10 days, from Bhadrapad Shudh Chaturthi to the Ananta Chaturdashi, Ganesha is worshipped. On the 11th day, the statue is taken through the streets in a procession accompanied with dancing, singing, and fanfare to be immersed in a river or the sea symbolizing a ritual see-off of the Lord in his journey towards his abode in Kailash while taking away with him the misfortunes of his devotees.
People will get small idols of Ganapathi & worship it in home too. When the big idol in the temple is taken to be immersed in the water resource in their locality, they also will take the small idols in their home & immerse it along with that. The idol will usually be decorated with the following flowers Vel erruku (White Calotropis gigantea) & Arugam pullu (Cynodon_dactylon) which is special for this Lord.

It's believed that kolukattai is the favorite food of Lord Ganesha so we present those to him while offering prayer. It's basically contains the raw rice flour stuffed with coconut & jaggery mixture and baked using steam. There are different varities of like sweet kolkuattai, kara kolukattai, parupu kolukattai etc...

We offer lot's of food items this like Avul, Pori, Kadalai, Sundal, Sweets, Fruits, Coconut along with the Kolukattai. But finally after pooja we ourself will eat those :-D

Your post is informative, colorful and interesting. Although I too worship Lord Ganesha, the significance of this festival was not known to me till you explained it so well. one thing is not good
"immersing or throwing the idols into the sea or river" for two reasons
1) main thing.. the decorations in the idols like paints or some chemicals pollute the sea/river water
2) it looks as though people are worshiping the lord(idol) for two or three days and after that throwing the lord(idol) away. the lord has nothing to do with our misfortunes..
So, plz try to avoid it in future
before 2 yrs we(my family) used to celebrate ganesh chaturthi as the same way you did, but when we realized the fact about polluting the sea and so... we stopped disposing the idol, instead we keep the idol at home(or never buy idols instead worship the ones in our home) :)

@mageshcse - I agree with you. That's why we are buying idol made of only clay [that too non-baked clay] & with no paints. We ourself with put kumkum as a decoration. Then after Pooja we ourself will immerse it in river & complete dissolve to become sand again. Hence atleast we are eco friendly. I request people to not go for idol made of Plaster of Paris & which contains glossy paints.
